I slice my veggies or fruits first and then chop them into cubes with this. Baby carrots or mushrooms are the exception - they go straight onto the chopper.
Crockpots:
I have two crockpots - my latest one from Costco for $40 is a 6qt and has steam vents in the lid. This is my first choice because of the vents.
My older one is also by Rival from WalMart - around the same price - but without the steam vents, which I like. A bamboo skewer across the top helps reduce the steam in the later hours of cooking, if needed - but you have to keep an eye on it if it starts to bubble. The food cooks the same in both.
I prefer oval crockpots to round ones - it is easier to fit more food in and gives a greater cooking area.
Knives: The most common knife I use is Victorinox Swiss Army Classic Round tip utility knife from Bed Bath & Beyond. Sold in both black and neon colors - they are $35 for a set of 4. I got the neon colors so that everyone in the house can tell they are sharp - and not go into the dishwasher with other black handled knives.
They are very very sharp .. the only stitches I have ever had was from one of these knives - but they are great for kitchen use - especially with the 20% coupons BB&B are always sending out.
Gloves: I always have a box of these handy for work with garlic, onions, meat, etc... it saves multiple hand washings.
