Honey Bourbon Crockpot Chicken

I used frozen chicken tenders from Trader Joes (not defrosted) - which meant there was no fat at all ... the chicken is moist but not super juicy.  Not a problem though, since there is enough 'sauce' to serve over it  - tasted really good over white rice, and will next time add broccoli for a one dish meal.

3 Ingredient Banana Pancakes

(recipe here) from Kirbie's Cravings - I added one more item -  @1/8 tsp. salt.

What's not to like about a recipe that is so simple & fun.  

I did spray the pan after each 'batch' - pancakes are about 3" round.

Fruit Salad tip:  cut oranges first - coat apples with the orange juice - now the apples won't turn brown.

Hummus Sandwich

Any combination of this makes a great sandwich.  Hummus, tomato, cucumber, avocado.  Tomatoes can be marinated prior in rice vinegar.  Toasting the bread and spreading the hummus on both sides keeps the sandwich from getting soggy.

Crockpot Balsamic Roast Beef

Notes: 4 lbs of chuck needed 6 to 7 hours to cook on high before it fell apart.  I reduced the sauce a little and served this over Udon noodles.  
Smells great cooking - the taste is surprisingly mellow (family friendly).
Used 6 qt. crockpot.

Trader Joe's Pumpkin Pie

This pumpkin is a little more liquid than other brands. It makes a pie that is light & fluffy - not dense like a store bought one.  Extremely tasty - almost like a mousse.
